Therefore I was quite thrown off balance when I tasted the metodo classico wines from Castello di Cigognola ... Owned by Moratti, a family of entrepreneurs, the team at the property have set themselves the lofty goal of challenging not Franciacorta but Champagne. Their secret weapon is north-facing, mature vineyards of Pinot Noir at elevations of at least 350 m (1,150 ft). Fully ripe grapes are what they are after, something which Oltrepò Pavese routinely delivers year after year, making adding sugar at any stage of the winemaking process unnecessary. The Morattis have taken on board star oenologist Federico Staderini, who among others is responsible for the Poggio di Sotto Brunellos that are extremely elegant even though they are grown in one of Montalcino's warmer areas. And that seems to be the Staderini signature: Oltrepò Pavese can be very warm, but the first releases of Castello di Cigognola do not reflect this in the least. His wine is highly-awarded every year.\u003c\/em\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: #750de7;\"\u003e\u003cstrong\u003eGEEK OUT ON GRAPES:\u003c\/strong\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe Primitivo grape is planted along the 'heel' of Italy - the Apulia region - and its name derives from its tendency to ripen earlier than other grapes.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eIts origins are interesting: It was an early grape for winemaking in Croatia (where it's known as \u003cstrong\u003eCrljenak Kastelanski\u003c\/strong\u003e or \u003cstrong\u003eTribidrag\u003c\/strong\u003e) at least as far back as the 15th century. In the 18th century a clone was taken to southern Italy, where it became a popular rustic table wine. In the late 1960s this vigorous vine travelled to the US, where it became known as \u003cstrong\u003eZinfandel\u003c\/strong\u003e and thrived in the heat of California. In fact, grape geneticist Carole Meredith, who studied the variety in great detail, refers to \u003cmeta charset=\"utf-8\"\u003eit as '\u003cstrong\u003eZPC\u003c\/strong\u003e' - \u003cstrong\u003eZinfandel \/ Primitivo \/ Crljenak Kastelanski\u003c\/strong\u003e.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003ePrimitivo is not as challenging a vine as others, like Pinot Nero, but it does tend to ripen unevenly - meaning patches of fruit within one bunch can be close to raisins while others are under ripe. Some winemakers separate the bunches (or even individual grapes) which can add to the cost of production and increase wine pricing, while others prefer to experiment and create wine from fruit with mixed levels of ripeness.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003ePrimitivo vines produce fruit with a high sugar content, which tends to result in wines with high levels of alcohol. Cooler climates can produce Primitivo wines with red berry aromas or flavours, but the Primitivos of southern Italy tend to hint at blackberry and liquorice plus some peppery notes. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eServe this punchy wine with rich tomato dishes, such as lasagne. Try it with a steak alongside a slightly sweet sauce or relish, or with barbeque food like sticky chicken wings. This wine, being a Barbera d'Asti DOC, could be expected to offer a lighter and fresher character compared to one from Alba, but thanks to the age of the vines and the stricter regulations for the Superiore category (alcohol and ageing) you can expect this particular wine to show a more complex and deeper side to Barbera d'Asti. Winemaker \u003cstrong\u003eLuca Ferraris\u003c\/strong\u003e ages his boutique wines in a deep cellar that was first built in the \u003cstrong\u003e1400s\u003c\/strong\u003e and then expanded and finished by Luca's grandfather. He believes in five elements that characterise his award-winning wines - sun, earth, warmth, scent and aroma. Intense, impenetrable color, with deep ruby reflections. It offers the nose with broad and intense aromas of ripe fruit, black cherry and plum jam, which blend well with floral notes of rose, violet and toasted and balsamic hints linked to aging in wood. In the mouth it is elegant in every aspect with an exceptional persistence. It is a wine that can age very well for at least 10\/15 years.
