WINERY NOTES: Organic extra virgin olive oil is produced in hilly areas such as the Lessini mountains and other slopes near Lake Garda, on those hills that exceed a minimum altitude of 300/450 meters and which allow the protection of crops with the utmost respect of organic farming processes. The position, the altitude and the calcareous nature of these soils are in fact particularly suitable for the cultivation of the olive tree and its survival.
The olives destined for the production of “organic” Fasoli Gino extra virgin olive oil come from typical varieties of the area such as Leccino, Frantoio, Favarol, Nostrano, Pendolino.
Before harvesting, the olive trees destined for the production of organic oil are cataloged and checked by foliar analysis by the AIAB Control Body. Once the positive results of the analyzes have been obtained, the olive is expected to ripen at the point of potting (change of color from green / purple). At the time of harvest, starting from the end of October and for the months of November / December, the olives are detached from the plant by means of specialized personnel with combs and mechanical pliers to maintain the integrity of the fruit and taken to the mill for milling within the next 24 hours.
The “Organic” Extra Virgin Olive Oil is a particularly delicate oil which is nevertheless able to maintain the intensity of an exquisitely fruity scent.
