Unique frizzante from a special grape; 80+ year process to cross-breed local grapes -Saperavia, Labrusca, Pinot Grigio, Riesling and Muscat Ottonel - and create the 'super grape' Solaris with immunity from diseases of the vine. 

Perfect as an aperitif, or in place of a cocktail. This nonfiltrato wine has been made with zero chemicals from vine to bottle. Decant or enjoy unfiltered - the way the winemakers intended.

CHRIS SAYS: "Pojer and Sandri, a family Trentino winery nestled in the dolomite mountains, completely turned around the wine industry in that area in the 70s, after having been illegal grappa makers before that! They've always wanted to make the best wine with as little intervention as possible so their dream was to make Zero Infinito - zero insecticides, zero chemical fertiliser, zero herbicides and zero sulphites... So after decades of research in a lab to make a disease resistant grape and 39 vintages in the vineyard, they made this really unique wine. Doesn't taste like normal wine, to be honest, but definitely is wine and made from grapes! More like an aperitif or a cocktail as lightly fizzy (they leave the natural yeast in the bottle), very refreshing, tangy peaches, pear, apricots, elderflower and very slightly yeasty.... we love it!"

GRAPE FACT: Solaris is a grape variety also known as a PIWI (a German abbreviation) which refers to a group of special cross-breed varieties. AKA - Eco-friendly viticulture without chemicals. "These were created by crossing European grape varieties and American fungus resistant varietals. Most of them still are known as hybrids or interspecific varietals and were first used in France from 1880 to 1935. The aim was to combine the good resistance to diseases and phylloxera of the American grape varieties with the high quality of European varietals. Unfortunately these new varietals were not able to survive on their own root. New cultures, which have been grown after 1950, are very complex, may have been created with Asian varietals and are the result of decades of crossings. They belong to the type Vitis vinifera because they are not to be distinguished taxonomically. An official examination in comparing different grape varieties has proven the high quality in wine production of Piwi varietals." For the full article click here.
