This list of wines are highly recommended as pairing choices for the CARIBBEAN menu at the Discover Concepts dining experience.
These wines will pair well with rich, spicy, tropical flavours.
The stories behind the wines (from the vineyard to the cellar) can be shared by our sommelier. A minimum of 6 bottles to be purchased, in order to book the somm for the event.
NB: Full-bodied, rich whites are a great choice to pair with spiced dishes, but if you are looking for a red try something light to medium in style to not overpower the flavours in the food. It's also better to avoid highly tannic reds alongside the Caribbean dishes, so grapes with lower tannin levels work well (such as Bonarda or some styles of Primitivo or Montepulciano), or wines made in a soften, smoother style (like the late-harvested Sagrantino of BENOZZO, or part-dried Sangiovese in GOVERNO). FYI, the sparkling shown below is made 'metodo classico' aka Champagne style, so a perfect start to a fantastic evening. And if you're feeling adventurous try the rose wines made from rare grapes (medium to full body rose, to stand up to flavours in dishes), or go bold and taste a fully 'orange' skin contact made in Friuli (the home of Italian orange wine).
