Tank Method Bubbles

'Tank Method' refers to sparkling wine made via the Charmat or Martinotti method.

First, a still wine is produced. During this initial fermentation the grape sugars are converted to alcohol (and CO2, which evaporates from the open tank). Next, the wine is transferred to an autoclave (pressurised tank) where a second fermentation takes place, trapping the CO2 to create the much-loved bubbles!

Prosecco must be made from designated areas of north Italy, using the Glera grape. A recent addition to the appellation is Prosecco Rose, where Pinot adds the colour. Alternative 'tank method' bubbles are made from other grapes (Lambrusco, Malvasia, Freisa, Bonarda and more) creating a wide range of colours and styles!
