A rich, complex red with classic Primitivo notes (dark cherry, dark plum, blackberries, violets, chocolate, tobacco, leather, cloves, cinnamon) that requires a decent time decanting to open up. This is a big wine, that will pair with rich meat dishes, or suit the end of an evening as a beautiful meditation wine.
"Es according to Freud: It is instinct and unbridled passion (the same with which this wine was produced) without conditions, without rules, beyond space and time, logic and morality. He knows neither good nor evil. The Id is subject to a single principle: "PLEASURE".
IN THE VINEYARD: Little use of chemistry, preferably using cover products to combat the main ampelopathies of the vine, mowing of weeds, no irrigation and no fertilization. HARVEST: Slight withering of the grapes on the vine, harvested by hand in plastic crates with careful selection of the bunches, transport by truck with isothermal cell. IN THE CELLAR: Sorting table, destemming, soft pressing of the grapes, maceration in 70 Hl stainless steel vat, contact with the skins - must for two to three weeks, temperature control of the marc hair, 2 delestage per day. Pressing of the marcs with vertical hydraulic press with stainless steel cage. After the drawing off immediately in 50% new and 50% second passage French oak barriques. Daily batonnage until the first racking. After about 9 months of aging in wood, the wine without the aid of clarifiers and without tartaric precipitations is bottled and after about 9 months of aging it is released for consumption."
