Despite its geographical proximity to Primitivo, the Negroamaro of Apulia is a different beast of a wine! The nose hits me with cacao, plum, tobacco, hints of cinnamon and the palate is moving towards dried fruit but with a freshness of fruit you might not expect from the nose! Slightly smoky character would make this a great pairing with BBQ (sticky ribs?)

IN THE VINEYARD: Little use of chemistry, preferably using cover products to combat the main ampelopathies of the vine, mowing of weeds, no fertilization. HARVEST: Slightly withering on the vine, harvested by hand in plastic crates with careful selection of the bunches, transported by truck with isothermal box. IN THE CELLAR: sorting table, de-stemming, soft pressing of the berries, maceration in 70 Hl stainless steel vat, contact with the must skins for three to four weeks, temperature control of the marc cap (Max T. 23-25 ° C) two delestages a day, after racking 24 hours in steel to remove the coarser lees and immediately in 50% new 50% French oak barriques in a single passage. Pressing of the pomace with vertical hydraulic press with stainless steel cage. Daily batonnage until the first racking. After about 12 months of aging in wood, the wine without the aid of clarifiers and without filtration and without tartaric precipitations is bottled and after about six months of aging it is released for consumption."
