Exciting new Metodo Classico (a.k.a. Champagne-method) from biodynamic estate in Veneto.
TASTING NOTES: Aromas of orchard fruit (apples, pears) and white flowers, with hints of breadcrumbs. Soft but persistent perlage; long finish. Overall a fresh, dry sparkling with bright acidity balanced by warmth of fruit. This is Brut Nature (no dosage) although the fruity character from the Garganega keeps the experience round and less tart than some other zero dosage styles. Delicious bubbles for a Singapore afternoon!
From the winery:
"We dedicate our first “metodo classico” to the crescent moon that inspires it.
Harvest by hand at the beginning of September. Soft pressing followed fermentation in stainless steel vats. 12 months of prise de mousse in the bottle. Brut Nature."
Pair with 'bigoli con le sarde' - traditional handmade thick spaghetti with fried sardines.
FYI: In a local Veneto dialect 'tasi' means "hush" and according to the winemakers it is a "call to shut up, to everybody who takes themselves too seriously" so we suggest you slow down, hush and take a moment to enjoy a sip of healthy vino by TASI.
